Let me share with you a bit about me.
My name is Heather and I am a wife and mother. My kids range from 14-21, and are a true joy. Hubby and i have been married 22 years and each year it gets better.
I have struggled with my weight since my oldest was born, and at my heaviest, I was tipping the scales at over 350 pounds. Life was not fun, it was a drudge each day to get out of bed and complete my daily tasks. I often had to take a nap just to make it through the afternoon. Grabbing any carby, sugary laden food was how I survived.
Well, maybe it was more of a sudo-survival.
Life isn’t made to just barely make it day to day, pay bills and die. We were created for so much more.
My life changed one day, when I started seeing light spots in front of my eyes. Thinking it was time for glasses, I was diagnosed with high blood sugar. My doctor was caring and compassionate and understood that this was the wake up call I needed. It was time to take my health in my own hands, and make some changes. NOW.
She suggested the keto diet for me to try for 3 months, and we would retest and see where my levels were. If there was no change, or not enough, medication would be needed.
I struggled the first few weeks of getting through the sugar crashes, and fatigue. My cranky levels were off the charts. But, I stuck with it.
3 months later, I was back in the doctor’s office. If I am being honest, I was scared of having to give myself insulin shots or take daily medications. What if I forgot and did worse damage?
The numbers were amazing. My fasting blood sugar went from 145 to only 89! We were both pleased with these changes. And not only that, but I had lost 30 pounds, my skin was clearer and brighter, and my moods were no longer unpredictable. I was an entirely different person.
I truly believe the ketogenic diet saved my life. It may be able to help you, too. That’s why I created Easy Keto Dishes, to give you some easy to follow recipes that will help you stay on track.
