Tis the season for all things mushroom! I love portobello mushrooms, as they are so versatile! Portobello caps can go from a burger bun, to a burger substitute to even a pizza crust!
When portobello mushrooms are small, they are sold as “baby bellas”, and sometimes called cremini mushrooms, depending on location. As they get larger and more mature, they are called portobello caps and are the mushrooms that grow to be about 4-5 inches in diameter. Baby bella mushrooms are a great side dish on their own, or as a stuffed appetizer.
Both sizes have the same earthy, rich flavor, and can be used in any recipe you would like.

What is caprese?
This is traditionally a salad, that is made of tomatoes, fresh mozzarella, basil, and often a balsamic vinaigrette. It’s a light and satisfying side dish on it’s own, but is often served alongside pizza, pasta, and other Italian dishes.
We take those wonderful flavors and add them to mushrooms for a delicious new twist. Our caprese stuffed mushrooms call for shredded mozzarella, instead of the fresh due to the time it takes to melt. Fresh mozzarella is also very watery, and the water in the mushroom added to the water in the cheese can lead to a sloppy mess.
Is pesto sauce keto friendly?
That of course depends on the recipe used. Our recipe has less than .5 gram of carbohydrate in 1/4 cup serving.

How do you clean portobello mushrooms?
Mushrooms are have some dirt still on them at the store, as they are low to the ground. The trick is to get them clean without getting them waterlogged. Mushrooms will absorb water and not brown nicely if they have too much water. They can end up mushy and gross.
The best way to clean a mushroom is by wiping them off with a damp towel. Simply wipe them off just before using. You will want to be sure to check for brown or mushy spots as well, and remove those parts before adding them to the recipe.
Do I need to clean out the gills of the portobello caps in this caprese stuffed mushroom recipe?
Yes, by carefully scooping out the gills and removing the stem of the portobello mushroom, you are essentially making more room for the pesto sauce, tomatoes, and cheese. Don’t be rough, just simply slide the edge of a spoon across the gills and scrape out.
Ingredients:
- 4 portobello mushroom caps
- 1 cup pesto sauce (get the recipe here)
- 2 roma tomatoes
- 1 cup shredded mozzarella cheese
Instructions:
- Carefully clean out the gills and stem from the portobello mushroom caps. Lay on a parchment lined or greased baking sheet.
- Spoon 1/4 cup pesto sauce into each mushroom cap.
- Cut the tomatoes into equal slices, and layer on top of pesto sauce.
- Sprinkle 1/4 cup of mozzarella cheese on top of tomatoes.
- Broil on high for 8-10 minutes, watching carefully after the first 5 for burning. Your oven times may vary.
