When strawberries are in season, I love to indulge in them. They are a low carb berry, that can still fit with my keto diet goals. Even those who follow a strict keto diet can add a strawberry treat once in a while.
Strawberries are full of Vitamin C, which is great for helping support your immune system. They also have less than 3 net carbs in 1/4 cup serving. Plus, strawberries are sweet, which can help ward off cravings for processed sugar.
For a keto shortcake, we are going to use my favorite cloud bread recipe. 3 eggs, a bit of cream cheese, some sweetener and we have the perfect gluten free base! Super easy, and no coconut flour or almond flour needed!

This keto strawberry shortcake is sure to make even your carb loving friends smile!
The cloud bread is easy to make. It’s another easily versatile, low carb recipe that I love. You can also add a bit of vanilla extract, or strawberry extract to the egg yolks mixture before folding in if you would like.
If you need to cut back the carbs in this, you can make it nearly zero carb by taking out the fresh strawberries and adding in the strawberry extract. You’ll get the same flavors, but it will be less than 2 carbs for each dessert.
Ingredients:
- 6 egg whites
- 1/4 teaspoon cream of tartar
- 6 egg yolks
- 2 ounces cream cheese, softened to room temperature
- 3 Tablespoons powdered Erythritol
- 1 cup heavy whipping cream
- 1 1/2 cups sliced fresh strawberries
Instructions:
- Separate egg whites into a mixing bowl.
- Add cream of tarter to the egg whites. Whip on high until stiff peaks form.
- In a separate bowl, beat together egg yolks and cream cheese
- Stir in sweetener and mix well.
- Carefully add whipped egg whites to yolk mixture and fold in.
- Spoon onto a baking sheet with parchment paper lined baking sheet to 4 inch circles, scant 1/2 cup amount.
- Bake in 325 degree oven for 25-30 minutes, watching carefully. You are looking for a golden brown top, and it will be still when fully cooked.
- Allow to cool for at least 30 minutes on a cooling rack.
- Meanwhile, add the heavy cream to a stand mixer, or a large bowl if using a hand mixer. Whip until light, fluffy, and heavy peaks form.
- Assemble your strawberry shortcakes by adding 1 cloud bread to a plate, topping with 3 Tablespoons whipped cream and 1 Tablespoon fresh strawberries. Repeat for 2 total layers.
