When you need a quick and easy dinner that will satisfy all your family, this easy meatloaf is what you need!
One of the Frenchman’s favorite comfort foods is meatloaf. When I am working on my monthly menu, it’s requested to be on there at least 2 times. The boys in my home all love it, it’s truly a comfort food for them.
This is a super easy keto meatloaf recipe. It goes from start to finish in less than 30 minutes, and is hearty, and filling.
What can you substitute for bread crumbs in this keto meatloaf?
Traditionally, meatloaf has breadcrumbs or cracker crumbs mixed in to help hold the meat together. Since they are not keto or low carb friendly, we have to come up with some low carb substitutions. What is a low carb substitute for breadcrumbs?
In this recipe, I used ground flax seed. It’s got the holding power of the breadcrumbs, but without the carbs. Flaxseed is almost all fiber, which is not digested by the body. This low carb meatloaf will give you a healthy fat, AND fiber boost all in one!
Other low carb substitutions for bread crumbs you can try:
- Almond flour
- Coconut flour
- Crushed chicken skins
- Low carb bread
- Crushed pork rinds (we eat Kosher, so this isn’t an option for us personally)
The other thing that is great about this easy keto meatloaf recipe is that you can make it ahead. REALLY! On your meal prep days, simply prepare the mixture, wrap it in a ziplock bag or aluminum foil and freeze until you are ready to bake it.
When you are ready to bake, simply thaw in the fridge for 4-6 hours, then add add to your loaf pan and bake. Who said the keto diet was hard, right? Meal prep makes all the difference!

- 2 pounds ground beef
- 1 egg
- 1/2 small onion, chopped
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup ground flax seed
Instructions:
- Preheat oven to 400 degrees F.
- Combine all ingredients in a bowl, and mix well.
- Place mixture into greased loaf pan and press in to shape.
- Bake for 25 minutes.
- Allow to cool for 5 minutes before removing from pan and slicing.

Ingredients
- 2 pounds ground beef
