I absolutely adore Tex-Mex type cuisine. Anything that has meat, veggies, and cheese is number one in my book. Fortunately, it can all be keto, or low carb, too!
Steak fajitas are a quick fix meal, that you can prepare the day before. Cut your steak and veggies, add your marinade and put back in the fridge. A day or two, or even three later, you have a meal that is ready in less than 10 minutes!
Are steak fajitas keto friendly?
Yes, the are. If you stay away from the beans, rice, and adding lots of onions, they can be perfectly keto friendly. You can put them on a low carb tortillas, too. You can also get our recipe for low carb tortillas here.
Another great way to enjoy them is to pile on top of salad mix, or just pile the meat and veggies on a plate. Try them over a bed of cauliflower rice, to!
Add full fat sour cream, queso, or cheddar cheese if you would like to stay under your keto goals. For your carb eating family members, you can serve it in tortillas if you desire.

What should you marinate steak fajitas in?
The steak needs a bit of acid to help tenderize it. I like to use lime juice as it adds not only the acid, but loads of flavor, too. A good marinade should also have your favorite spices, and a bit of oil to help hold it all together.
If you don’t like lime juice, you can use lemon juice, or even apple cider vinegar.
What’s the best steak for fajitas?
They are commonly made with skirt steak. It’s a tougher cut, but perfect for super thin slicing, flavorful marinades, and rapid cooking. However, you can also use thin cut sirloin, strip, or even rib eye if you want. Flank steak is also commonly used in place of skirt, as the two are seemingly interchangeable.
Chances are, if you’ve eaten fajitas in a restaurant, you have eaten skirt steak. Skirt steak can have a more rich flavor than flank steak and should only be cooked to a medium rare temperature for best flavor and texture. It’s the classic steak for fajitas.
How do you cook keto steak fajitas?
After a good marinade, steak fajitas can be cooked over the grill, in the oven, or on the stove top. The “trick” is to get whatever method you use nice and hot FIRST, then add the steak and veggies. This allows them to cook well, without burning.
This recipe will show you hot to cook steak fajitas on a cast iron skillet.
I love using cast iron in my kitchen. When well taken care of, it’s virtually non stick. It heats quickly and holds a high temperature without burning the pan.
In my opinion, food seems to taste better when it’s made on cast iron. Of course, you can also cook it on a stainless steel pan, or even non stick teflon pan if that’s all you have. I won’t tell on you.
Ingredients:
- 2 lbs. flank steak
- 1 red bell pepper, sliced
- 1 yellow bell pepper sliced
- 1 medium onion, sliced
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 teaspoon chili powder
- 1 1/2 tablespoons avocado oil
- 2 tablespoons lime juice
- toppings-chopped tomato, avocado, cheese, sour cream
Instructions:
- Slice flank steak into 1/2″ thick pieces. Slice peppers and onions into 1/2″ thick pieces and set aside.
- In a large mixing bowl, add garlic, paprika, chili powder, cumin, and salt. Whisk in lime juice and avocado oil and blend well. Add steak and peppers and toss to coat. Cover with foil and allow to sit for 30 minutes at room temperature.
- Heat avocado oil in a large cast iron skillet over medium high heat.
- Pour mixture onto hot skillet and fry for 10 minutes, turning frequently to ensure even cooking. Remove and allow to rest for 5 minutes
- Top with sour cream, cheese, avocados and tomatoes as desired.
