What kind of burrito has gravy on it?” Of course, in my mind, gravy is either beef or chicken broth, and made with a thickening agent, butter and stock. Such a naive Northern girl.
Yeah, as you can probably guess, that wasn’t the case here. It was smothered with enchilada sauce. Gallons and gallons of this rich, red enchilada sauce. As much as I loved it, I knew there had to be a better way to enjoy the flavors.

I gotta tell you, this gluten free enchilada sauce is THE Mexican food condiment on your keto diet. It goes great on burritos, shredded chicken enchiladas, over eggs, and even drizzled on taco salad. Of course, you could always add some Restaurant style salsa, too! Try it with this low carb Mexican casserole!

How do I make this low carb recipe?
Simply melt your butter in a medium sized saucepan, over medium high heat. Add the seasonings and allow flavors to infuse for a minute. Add the remaining ingredients, and simmer.
This sauce comes out pretty thick, and is perfect for most recipes. However, you can add up to 1 cup water or chicken broth if you would like it to be thinner.
How do I store this sugar free enchilada sauce?
Since it contains no preservatives, this is best stored in the fridge for up to a week. You can also freeze in ziplock baggies or freezer containers for up to 6 months. However, there may just not be any leftovers once you dig in!

- 1 (15 ounce) can tomato sauce
- ¼ cup tomato paste
