My son took me out on a date the other night. We had a lovely dinner, and enjoyed some great catching up time with each other. I was able to stay on track with my carbs, fats, and proteins like a good, keto following girl.
But, then dessert came.
He ordered the deep fried cheesecake bites for us to share. As someone who wants to avoid sugar, and lose excess fat, I needed to stay away from them. As a mother who was having a great time with her adult son, I needed to share in them.
Fortunately, I was able to exhibit some self control and only eat 3 of the cheesecake bites at the restaurant. I never want that sick feeling from overindulging again.
Has that happened to you? Have you ever gone out to eat with friends, or had a lovely dinner party and wanted a rich, indulgent dessert but felt you couldn’t enjoy it? You may have seen all the fat bomb recipes all over the internet, but are they truly perfect for serving guests? Maybe. Maybe not.
These fried keto cheesecake bites are the perfect dessert to serve company, yet still stay on track with your new way of eating.
What ingredients are in these fried cheesecake bites?
Fried cheesecake bites feature rich cream cheese, sweet vanilla extract, with almond meal instead of graham cracker crumbs. Lightly air fried to a golden brown, they are a perfect end to any fine meal.
Don’t like giving dinner parties, or just want to indulge in your sweet tooth a bit, while staying true to the keto diet? With only 2 net carbs each, these cheesecake bites will also make a perfect sweet treat or fat bomb.
Why do my fried cheesecake bites melt?
You will want to make sure they are FROZEN before you try and fry or bake them, otherwise they will melt. They froze solid enough in my freezer in 30 minutes, but up to 2 hours may be beneficial for freezing time.
Depending on the air fryer you use, you may need to adjust the heat/times. For my air fryer/convection oven combination, I set the time for 8 minutes at 350 degrees. I have retested it with a counter-top air fryer and had to adjust the time to the recipe below. The difference was the temperature was 300 degrees, and only 2 minutes. So, you can see how it might change based on your equipment.
Since I don’t have the same air fryers as some other do, start with a lower temperature and lower amount of time to avoid them melting into a hot mess.
Are these fried cheesecake bites really hot?
While they are slightly crunchy on the outside, with a creamy center, they are not as hot as what you would get at the restaurants. However, they are still delicious, especially when dipped in chocolate syrup.
If you don’t like the idea of a warm fat bomb, they are also delicious frozen and straight from the freezer!
Ingredients:
- 8 ounces cream cheese
- 1/2 cup erythritol
- 4 Tablespoons heavy cream, divided
- 1/2 teaspoon vanilla extract
- 1/2 cup almond flour
- 2 Tablespoons erythritol
Instructions:
- Allow the cream cheese to sit on the counter for 20 minutes to soften.
- Fit a stand mixer with paddle attachment.
- Mix the softened cream cheese, 1/2 cup Erythritol, vanilla and 2 Tablespoons heavy cream until smooth.
- Scoop onto a parchment paper lined baking sheet.
- Freeze for about 30 minutes, until firm.
- Mix the almond flour with the 2 Tablespoons erythritol in a small mixing bowl.
- Dip the frozen cheesecake bites into 2 Tablespoons cream, then roll into the almond flour mixture.
- Place in an air fryer set at 300, for 2 minutes.

FYI: Step 3 doesn’t have an amount for the cream. So, it’s 2 Tbsp in the cream cheese mix and then another 2 Tbsp to dip in before the almond flour, I’m assuming…

Delicious but they melted, i even tried 3 x with the cheesecake bites being in freezer over night. I love the recipe though, very tasty frozen or as is.

I decided to just try one very frozen bite in the air fryer first. I checked after a minute and it was already melting. We think they’re delicious just frozen! Has anyone had luck/success with this recipe?
I just tried making these with my Ninja air fryer. They did not work. I froze the balls for majority of the day. They melted and did not looked remotely toasted like your photo. They were a gooey, slightly frozen, bite. Although good, but not what I was hoping for.
I don’t have an air fryer can I roast thr almond flour first then dip wouls that work?
You could do that, but the flavor won’t be the same. But, if it works, why not?
I tried this with the Mealthy attachment to an Instant Pot… After 2 min at 350, the outside was not browned at all and the inside was still frozen. I added 2 more minutes, still not brown outside, but no longer a ball… melted.
I made these tonight and loveeed them! I froze them for about an hour and did them at 300 for 2.5 mins or so. They were a little gooey (But not bad) so I popped them back in the freezer after frying for only about 2 mins. These are really good!
