Ah, the keto diet. The basic idea that you consume high fat, moderate protein, and very little carbs to gain health. A ketogenic diet shouldn’t be just a diet, it should be more of a lifestyle. It’s not something you do for short term for rapid weight loss, it is a way of eating that will allow your body to heal, burn it’s own stored fat, while you lose excess fat.
Removing grains and sugar from your diet is one of the ways your body heals, because, for many, those two ingredients can cause inflammation in the body. Unfortunately, grains and sugar are the two main ingredients in most bread products. That’s what makes these fluffy keto biscuits so amazing! You can have your biscuit and eat them, too!
Biscuits made with regular flour can have a bazillion carbs per biscuit, and that doesn’t fit on a ketogenic diet. Okay, maybe not exactly a bazillion carbs each, but they are higher in carbs than most of us can consume a day and stay in ketosis.
Unlike the traditional biscuits many are used to, these fluffy keto biscuits use almond flour, eggs, and cheese to achieve a similar result. The difference is in the amount of carbs. These fluffy keto biscuits have only 1 carb each. So feel free to indulge with your soups, salads, or even as a breakfast sandwich!
The best part is that these garlic cheddar fluffy keto biscuits take less than 20 minutes start to finish!
The boy and hubby liked these biscuits, and the Frenchman was “okay” with them. He’d prefer the real deal, but I am super glad he’s flexible. That’s what makes him so awesome.
They freeze well, so make a double or triple batch as part of your meal prep and you can have fluffy keto biscuits for lunch or dinner any day, with very little effort at all. Simply allow them to thaw at room temperature for 20 minutes, or heat in a toaster oven or microwave before enjoying.
Ingredients:
- 1 1/2 cups almond flour
- 1 teaspoon cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 cup shredded cheddar cheese
- 4 Tablespoons butter, melted
- 2 eggs
- 1/3 cup heavy whipping cream
Instructions:
- Preheat oven to 400 degrees F.
- In a medium sized mixing bowl, blend together almond flour, cream of tartar, baking soda, salt, and garlic powder.
- Using a separate bowl, combine cheese, melted butter, eggs, and cream.
- Combine the dry into the wet and mix until well blended.
- Scoop into a greased 12 space muffin pan.
- Bake for 11-13 minutes, until golden brown.
- Store leftovers in an airtight bag for up to 3 days.
