If you follow me on Instagram, you know that we have recently moved across the country. Like 2,000 miles from our original space. In the meantime of looking for a new house, my family and I are living life in our RV.
While the RV is nice, it’s short on space. 5 adults in a 31 foot trailer makes for some interesting challenges. Things like 2 people can’t be in the kitchenette at the same time, or walk into the back bedroom at the same time. Don’t get me started on the bathroom being within arms reach of the dining table, either. Fortunately, it’s a temporary situation.
In the meantime, we keep our keto goals as much as we can. I’ll be honest, it’s not always easy. The fridge has very little space to store lots of keto friendly meats, cheese, and such. When we want different foods, we have to get it from the grocery store that day. I am so glad it’s less than a mile away, honestly.
These garlic Parmesan wings are perfect for our RV life.
Made in the Instant pot, and stuck under the broiler for a couple minutes, they are quick and easy. Plus, there’s not a lot of heat involved with making them, so it’s great for those hot summer days when the A/C is having a hard time keeping up.

What sides should I eat with chicken wings?
I like to eat mine with a green salad. You can dip these garlic Parmesan wings in ranch or blue cheese dressing as well. Other keto friendly options would include:
- green beans
- asparagus
- grilled zucchini
Can I make baked garlic Parmesan chicken wings instead of the Instant Pot?
Absolutely! You can make them in the oven. Simply place the frozen wings on a baking sheet and bake at 400 degrees F for 45-50 minutes. Proceed with step 4. To slow cook these wings, place in a crock pot on high for 3-4 hours, then continue to step 4.
Ingredients:
- 1 pound chicken wings
- 1 cup Parmesan cheese
- 2 Tablespoons Italian seasoning
- 1 Tablespoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup butter melted
Instructions:
- Add trivet and one cup of water to the bottom of the Instant Pot.
- Place frozen wings in Instant Pot on top of trivet.
- Add lid, and move valve to “seal”. Set to manual for 15 minutes. Release pressure naturally.
- Meanwhile, combine Parmesan cheese and seasonings in a medium bowl and melt butter in small saucepan.
- Preheat broiler to high.
- Remove wings from Instant Pot, dip wings in butter, then toss the wings in the seasoning to coat.
- Place under broiler on high for 5 minutes.
