All the love and comfort you’d expect from Grandma’s soup in a keto friendly version! This home-style chicken zoodle soup is full of all the flavors you crave, with less carbs!
Chicken soup. Perfect food for the heart, mind, and soul. The problem with homemade chicken noodle soup is that the noodles and carrots contain way to many carbs for the average keto diet. As a child, we often ate chicken noodle soup, but it was out of the can.
Can you say, “YUCK”?
I learned how to make homemade chicken soup, and it was so much better. The chunks of veggies, the home-style noodles and broth all worked to make a comforting dish. But, I miss that comforting soup, with the rich broth, the big chunks of noodles and loads of chicken. There HAS to be a way to get it, and get it all keto friendly.
Homestyle Chicken Zoodle Soup
I give you the chicken zoodle soup.
I replaced the noodles with zucchini noodles, and that is common. BUT, what about those carrots? What could I use for a different vegetable to sub for the carrots that is keto friendly, but give close to the same color, texture and mouth feel that carrots bring?
RADISHES.
Yup, radishes. Those peppery little bites you often see in salads can be roasted for a full, sweet flavor. AND, they make a delicious carrot substitute in this chicken zoodle soup. Who knew, right? Also, you can use leftover rotisserie chicken, or lemon pepper chicken to make this dish super easy and fast! Loads of veggies, rich broth, and moist chicken? You BETCHA!
Ingredients:
- 2 Tablespoons coconut oil
- 10 radishes, cut into quarters
- 2 ribs celery, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 Cups chicken broth
- 4 chicken breasts, precooked, either diced or shredded
- 2 whole zucchini or summer squash
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons turmeric
Instructions:
- In a large stock pot, heat the oil. Add the onions, garlic, celery, and radishes and sautee for 10 minutes.
- Season with salt and pepper.
- Add in the chicken broth and simmer until veggies are tender.
- Add in shredded chicken, and bring broth to a boil.
- Place zucchini in zoodler and make into noodle shapes.
- Cook zoodles directly in the broth and allow to heat through, approximately 3 minutes.
