A perfect dessert any time of year, this chocolate cake will wow your friends and family!
When you need an easy dessert to make for a family gathering, or for a holiday, what do you turn to? My new favorite is this keto chocolate cake.
Why? Because, well, chocolate. I mean, who wants to resist chocolate, right?
Besides my hubby, but that’s another thing. Can you believe that my hubby claims to not like chocolate? Yet, I still married him.
What is keto chocolate cake, exactly?
This is a good question. A keto chocolate cake has to meet certain “standards”. One, it has to be chocolate.
Two, it has to fit in the keto diet macros. That means that the amount of carbs per serving is going to be less than 10. The fat and protein content should be the main source of calories.
To make this keto, we will swap out the regular granulated sugar that most cake recipes call for and use erythrtiol. This is a substitute sweetener that has zero affect on your blood sugar. No rises and crashes with it!
We are also going to swap out the classic white flour with almond flour. This has more protein, and far less carbs than white flour. It’s a great baking flour, as it can be substituted in most recipes 1:1.
Keto Chocolate Cake
How do you make a low carb chocolate cake without leaven?
You will notice that this recipe has no leavening agents in it. No baking powder, baking soda, or yeast. That makes it perfect for the week after Passover, called Unleavened Bread. For those who celebrate that week, we are not to eat any leavening at all.
This keto chocolate cake gets it’s airy texture from the egg whites. That also provides the “lift” that baking soda or powder would normally give. The sour cream is added for smoothness and another source of “lift” in the cake.
Are you ready for a delicious keto chocolate cake recipe you can indulge in without guilt, any time of year?
Ingredients:
- 3 Tablespoons Cocoa powder
- 3 ounces baking chocolate, chopped
- 1 Tablespoon butter
- 1/2 cup sour cream
- 3 large eggs, separated, plus 2 additional large egg whites
- 1/3 cup erythritol plus an additional 1/2 cup erythritol
- 1 teaspoon vanilla
- 2/3 cup almond flour
- 1/4 teaspoon salt
- 2 teaspoons powdered erythritol
Instructions:
- Preheat oven to 350 degrees F. Spray a 9 inch springform pan with cooking spray. Dust with 1 Tablespoon of cocoa powder, and tilt pan to coat. Shake and dispose of any excess.
- Combine chocolate and butter in a double boiler over medium low heat, and stir until melted and combined.
- In a small bowl, combine remaining 2 Tablespoons cocoa powder, sour cream and stir until smooth.
- Using a stand mixer with whisk attachment, beat egg yolks and 1/3 cup erythritol on medium speed until smooth.
- Reduce speed to low and beat in chocolate mixture, almond flour and vanilla. Set this bowl aside.
- In a separate bowl, and using a clean whisk, beat 5 egg whites and salt until stiff peaks are formed. Add remaining erythritol, 2 Tablespoons at at time until peaks are glossy and stiff.
- Fold egg mixture into chocolate mixture, and combine just until fully incorporated.
- Pour into prepared cake pan and smooth top.
- Bake in preheated oven for 35-40 minutes, until toothpick comes out clean.
- Cool cake completely on cooling rack, then remove side of pan carefully. Dust with powdered erythritol, and cut into slices.
