Ice cream.
It’s the choice of comfort food for us. However, with some brands having 32 grams of sugar per serving, it’s NOT an item to have on a keto diet. Actually, store bought ice cream may not be something you EVER want, regardless of how you eat on a regular basis. Why?
Because of the industry’s dirty little secret. Propylene glycol.
It’s what keeps the ice cream from being rock hard in the freezer, because it can absorb the water in the dairy. It’s what makes radiator fluid in your car keep the water out. Because all ice cream makers use this ingredient, they don’t need to add it to the list of ingredients on the package. The FDA has decided that a “small amount” is GRAS (generally recognized as safe).
But, is one serving a week a small amount? What about one serving every day? Every other day? Disgusted yet? I sure was. At what point are you ingesting more than is “safe”?
Good news, though. You can make your own ice cream at home, easily! You can even do it without an ice cream churn. A good blender or food processor will make this job so easy for you. Since you control the ingredients, you will be sure you are avoiding chemicals and added sugar you don’t want.
How do you keep keto ice cream from freezing solid?
We are going to add MCT, medium chain triglyceride, oil to the mixture. If you don’t have MCT oil, you can use regular coconut oil. Both will help keep the ice crystals from forming in the mixture and keep your keto ice cream softer and easier to scoop.
If you WANTED to, you could also add a vodka instead of the coconut oil. However, the alcohol doesn’t go away in this recipe, so it is not child friendly.

Is ice cream okay to eat on the keto diet?
Some people have issues with dairy digestion. If you notice that you are stalling even while keeping macros in check, you may want to see if you are dairy sensitive. This is easily done by removing all dairy for 3-4 days, and seeing how your body reacts.
If you would like a dairy free option, you can still enjoy this keto friendly chocolate ice cream. Simply replace the heavy whipping cream with full fat coconut milk.

The recipe calls for churning in the ice cream maker. However, if you don’t have one, you can just blend this together and freeze as is. It will take a bit longer, but it will still turn out rich and creamy, and full of chocolate flavor.
Help! My eggs curdled and made huge chunks!
That happens from time to time. To prevent it, you want to make sure to cook the eggs and cream over very low heat, stirring constantly. However, if they still curdle, and you find egg chunks, then push the mixture through a sieve to remove them. You will do that after the cooking time.

Ingredients:
- 1 3/4 cups heavy whipping cream
- 6 large eggs
- 1 cup erythritol
- 1/2 cup cocoa powder
- 1 vanilla bean
- 2 Tablespoons MCT oil (you can use coconut oil if you want)
Instructions
- In a medium sized pot over low heat, add the cream and eggs.
- Stir constantly to combine and allow to heat slowly.
- Add the erythritol and cocoa powder and stir to combine, allowing it to dissolve.
- Remove from heat.
- Slice the vanilla bean in 1/2 lengthwise, and scrape out the insides. Stir into mixture.
- Add in MCT oil and stir.
- Chill mixture in refrigerator for 2 hours.
- Pour into ice cream churn and churn according to manufacturer’s instructions.
- Pour into bread loaf pan, lined with parchment paper
- Place in freezer for an hour to allow keto ice cream to “ripen”.
- Serve and enjoy!
