One of my guilty pleasures was always cinnamon rolls. It started with going to the mall with friends, and grabbing a Cinnabon cinnamon roll. Or two. Maybe three.
Oh, foolish girl I was back in my younger days. I wish I could go back and slap my hand and yell, “Put that down, you’re gonna regret it later.” However, it’s likely I wouldn’t have listened to me back then.
Being on a keto diet has certainly helped me correct many of the mistakes of my past. I have less inflammation in my joints, better control over my blood sugar, and blood pressure, and I feel better overall. The more I overcome and heal from the traumas that caused me to turn to food for comfort, the better overall the healing has been for me.
However, I still like my comfort foods, like cinnamon rolls.
Making these keto cinnamon rolls is really a game changer.
What is fat head dough?
The base of these keto cinnamon rolls is fat head dough, a mixture of cheeses, almond flour, and egg. The best part of this dough is that you can make it into nearly anything you’d like. Savory or sweet, it’s a great base for nearly any baked item.
This was originally created by the documentary film maker, Tom Naughton. He came out with the documentary “Fat Head” as a response to Morgon Spurlock’s “Super Size Me. - The key to working with these keto cinnamon rolls is to push it out with wet hands. The dough can stick to your fingers otherwise, and make a mess.

- After baking and frosting, freeze in a single layer for 45 minutes. Place into a freezer bag or container and store in the freezer for up to 6 weeks. Thaw on the counter, or in the microwave for 30 seconds.

Ingredients:
- 2 1/2 cups mozzerella cheese
- 2 ounces cream cheese
- 3 eggs
- 1 1/2 cups almond flour
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 3 Tablespoons granulated eryhtriol
- 1/2 cup brown sugar swerve
- 1/2 cup powdered erythritol
- 4 Tablespoons soft butter
- 1-2 Tablespoons heavy cream
- 4 ounces cream cheese, softened
Instructions:
- Preheat oven to 400 degrees F.
- Over a double boiler, melt mozzarella cheese and cream cheese together.
- When melted, stir together and beat in 2 eggs. Stir in vanilla and granulated erythritol.
- Using wet hands, push the dough into a rectangle.
- Spread the softened butter and brown sugar swerve in the center, and sprinkle with cinnamon.
- Cut into 8 pieces, then place in buttered baking dish.
- Bake for 18-20 minutes.
- Beat softened cream cheese, powdered erythrtiol until fluffy.
- Add heavy cream as needed to keep frosting soft and fluffy.
- Remove cinnamon rolls from oven, and drizzle frosting while hot.
