One of my favorite things to do in the kitchen is to create. It’s my stress relief, my outlet. From savory dishes to sweet desserts, I love making all kinds of different foods. On the ketogenic diet, it can be hard to create different things, though.
Honestly, there are only so many ways to put together different ingredients. Adding a bit of this here, a pinch of that there, and adding your heart and soul is what makes a recipe unique. That’s why I just had to try and create my own low carb sweetened condensed milk.
When I was younger, making fudge was one of my mother’s specialties, especially around the holidays. Now that I no longer consume the white sugar in those crazy amounts that I used to, I needed something that would give me the same properties, but in a sugar free sweetened condensed milk.

It’s milk that has had a lot (up to 60%) of the water content removed, and generally has been sweetened. You can easily find this in the canned milk area in baking aisles in almost any grocery store.
How do you make a low carb condensed milk?
We are going to use 3 simple ingredients- heavy cream, powdered sweetener, like erythritol or swerve confectioner’s sugar, and a bit of unsalted butter. Gently heating it over medium heat, and whisk it once in while to keep it from burning.
The process of heating and condensing the cream can take up to 20 minutes. Acually, it’s ok if your mixture is taking longer to thicken. Try turning up the heat a touch if it’s taking too long. However, don’t rush the process or you’ll ruin the batch.
How long is homemade condensed milk good for?
You will want to use each batch up within 7-10 days. All dairy products can spoil a lot faster when not refrigerated properly. so store it in the fridge, not room temperature. This recipe makes about 1 cup, or 16 servings total.
Can I freeze this keto condensed milk?
I would not recommend freezing this, as it can curdle and change textures when thawed. Make each batch as you need, for best results.

I haven’t tested this recipe dairy free, but a good place to start would be with coconut milk, powdered sweetener, and cacao butter.

Ingredients:
- 2 cups heavy whipping cream
- ⅓ cup powdered erythritol
- 2 Tablespoons butter, unsalted preferred
Directions:
- In a saucepan, combine the heavy cream, powdered sugar, and butter and bring to a boil before reducing to a simmer.
- Simmer for about 20 minutes, randomly stirring, until the mixture is thick and gooey like sweetened condensed milk. The mixture should be reduced to about half its original size by this point.
- Place in a jar or container with a lid and either use immediately or allow to cool and use later on.
Keto Condensed Milk (low carb, gluten free, keto)

Ingredients

- ⅓ cup powdered erythritol
- 2 Tablespoons butter, unsalted preferred
