Ah, the Instant Pot. You have made my life so much easier. I can put an entire frozen chicken in your deep recesses, add the lid and you do your thing in less than 90 minutes. Lemon Chicken never had it so good before I met you.
What else can the Instant Pot Do?
The Instant Pot has been a meal saver many times over for so many people. Whole, thawed, chickens cooked in less than 30 minutes. Meatloaf in under 15 minutes. There’s not much the Instant Pot CAN’T do. Having the Instant Pot in my kitchen means quick hard cooked eggs, full flavored broths, and even keto friendly cheesecakes in a snap!
I am in love with the versatility of the Instant Pot, too. If you need to be gone all day, but want a tender, juicy well cooked meal when you get home, simply start your food when you are ready to leave the house. Your food will cook to perfection, AND be held at a serving temp for 8 more hours! It’s like having a personal chef in your kitchen.
Instant Pot Lemon Chicken
This Lemon Chicken recipe is sure to be a family favorite in your house. Lemon juice provides tangy sweetness, with the tender juiciness that the Instant Pot pressure cooking brings makes this a winner, winner, chicken dinner.
And the best part? You can start with either a whole, thawed chicken or FROZEN chicken. If you are having a super busy day, and forgot to take that chicken out to thaw, never fear!
You can also make this recipe in your pressure cooker with chicken breasts, or chicken thighs. Simply follow the directions for the whole chicken, using desired chicken parts.
Now, let’s talk about cooking time. Sure, you will be able to get this done in the instant pot in 2 hours. But is that REAL time? Not really. To be honest, the total cooking time for this chicken will be 2 hours, but the cooking time is only 90 minutes. The rest of the time is dedicated to the pressure cooker needing to come up to pressure.
Don’t forget to save the carcass to make homemade chicken broth.
**Cooking your chicken in the Instant Pot only will NOT give you a golden, crispy skin. To brown the chicken, you WILL need to turn your oven’s broiler on, remove the chicken from the instant pot and allow it to sit under the broiler elements for 5-7 minutes to get a crispy skin. Of course, if you would rather not wait, you CAN still enjoy the lemon chicken without the crispy skin, straight from the Instant Pot.**

Instant Pot Lemon Chicken

Ingredients
- 1 whole chicken, thawed or frozen
- juice of 3 lemons
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried parsley
Instructions
Place chicken in the Instant Pot.
Add 1 cup water or broth to the bottom.
If frozen, set the timer on auto for 75 minutes. If thawed, set the timer for 30 minutes.
Allow to release pressure naturally.
Remove the chicken carefully and place on a baking sheet.
Pour lemon juice all over chicken.
Sprinkle with seasonings.
Place under broiler in oven for 5-7 minutes, if desired, to allow skin to crisp up and get golden colored.
Remove from oven and allow chicken to rest for 10 minutes before cutting.
