Just when you thought the days of your favorite comfort food were gone on the keto diet, along comes a hashbrown casserole that will make you smile! Low carb, keto friendly spaghetti squash hashbrown casserole is perfect for brunch or anytime!
I sometimes miss the days of going out to eat. I could order nearly anything on the menu and not give it another thought. Of course, that habit is what led me to be sick, tired, and overweight.
Maybe that’s not a good thing to miss, eh?
One of my favorite foods to order out was that cheesy hashbrown casserole. Cracker Barrel, anyone? Just the thought of it makes me smile, even now. But, those carbs. Ugh!
What is hashbrown casserole?
It’s a cheesy concoction, normally made with onions, cheese, and frozen hash browns potatoes. It’s comfort food, for sure, but at a carby price. We can make this baked hashbrown casserole without the unnecessary carbs and get all the delicious flavor!
We will use our new stand in, spaghetti squash.
Spaghetti squash is a hard, winter squash. When cooked, it shreds into thin strands that look very similar to spaghetti. It’s a great pasta replacement, and it does double duty for low carb hashbrowns! It’s the star in this hashbrown breakfast casserole.
Is this hashbrown casserole gluten free?
Yes. Unlike the traditional baked hasbrown casserole, it contains no added flour or thickener. Spaghetti squash is naturally gluten free as well.
Is this hashbrown casserole dairy free, or can I make it dairy free?
This particular recipe uses a lot of dairy. You can try and sub out the butter, cream and cheese for non dairy options, if you wish. They will still give a great flavor, but the results may differ. When heavy cream is heated for a period of time, it acts like a natural thickener.
If making this dairy free, you may need to add some milled flax seeds or xanthan gum to help thicken it up.
To make a complete breakfast with this keto friendly, spaghetti squash hash brown casserole:
- Add eggs and bacon on the side
- Enjoy with bulletproof coffee
- Serve some low carb berries with heavy cream
How do you cook spaghetti squash?
There are a couple of ways to cook spaghetti squash. You can cook it in the microwave, the oven, your crock pot or your Instant Pot. All 4 ways are perfectly fine. Cooked spaghetti squash can be made ahead of time, and frozen to be used as needed for this recipe, too.

For all other methods of baked spaghetti squash:
- Cut the squash in half lengthwise, and scoop out the seeds. You can save them for roasted seeds like this pumpkin seed recipe.
- Place in a buttered oven or microwave safe dish, cut side down. You can also use a parchment lined baking sheet in the oven, if you wish.
- If using the crockpot, butter the insert and place the squash cut side down.
- Cook in the microwave on high for 20 minutes, or until fork tender. Bake in the oven for 45-50 minutes at 400 degrees F. Cook in the crockpot for 6-8 hours on low.
- Remove the squash, and slide a fork down the squash to shred into pasta like strands.
- Serve and enjoy!

- 2 Tablespoons butter
- 1 cup yellow onion, chopped
- 2 cloves garlic, minced
- 2/3 cup heavy whipping cream
- 4 oz cream cheese
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried mustard powder
- 1 cup sour cream
Instructions:
- Preheat oven to 400 degrees. Grease a 9×13 casserole dish with either butter or cooking spray.
- In a large sauce pan, melt butter over medium heat. Add in onions and garlic, and sautee for 3 minutes.
- Add to the pan the heavy cream, cream cheese, and 1 cup of the cheddar cheese. Heat until cheeses are fully melted, stirring constantly.
- Season with salt, pepper, and dried mustard. Stir to combine.
- Stir in sour cream and spaghetti squash, and mix well to coat all squash.
- Pour into a greased 9″ x 13″ baking dish, and sprinkle remaining cheddar cheese on top.
- Bake uncovered for 40 minutes, or until bubbly and lightly browned.
