Need a refreshing drink that will keep you on your low carb, or keto goals? Try this non alcoholic berry bellini. A frozen, sparkling, berry treat that will refresh and cool you any time of year!
What is a bellini, you may ask? Well, traditionally, it’s a cocktail that has Prosecco champagne, and a fruit puree. The most common flavor used is peach puree, or peach nectar, but all fruits can be used.
The story behind the Bellini is that is was created in the 1930s or 40s at Harry’s Bar in Venice, Italy by bartender Giuseppe Cipriani. It was named after the Italian renaissance painter, Giovanni Bellini.
Originally, this beverage used sparkling Italian wine, particularly Prosecco, and it is still made that way in Italy. Elsewhere, it is often made with Champagne, though almost any sparkling wine will do.
Peach schnapps can also be used in a bellini, instead of the sparkling wine or champagne, if you so desire. It can also be ADDED to the sparkling wine for a deeper peach flavor. (and a more alcoholic kick!)
Whatever you choose to make your bellini with, they are always served in a pretty glass, such as a champagne flute, and are a beautiful addition to your Spring or Summer brunch table.
Our low carb berry bellini will give you the same sparkling flavors, without the alcohol.
First, why do we want to do away with the alcohol? Well, there are a couple of reasons. The sweet champagne, or sparkling wine commonly used will have a load of carbs. A 5 ounce glass of dry champagne has approximately 4 net carbs.
While 4 net carbs certainly isn’t a lot, most people drink more than a 5 ounce glass easily. Not to mention that when you have some alcohol, you are more likely to give in to your carb cravings. Well, at least *I* am. 🙂
So, what are we going to use instead of the sweet wine? We are going with a stevia sweetened soda, called Zevia. Zevia is a very popular sugar free soda that has hit the market in the last 10 years or so. It has no carbs, no calories, and is sweetened with stevia leaf extract, making it perfect for the low carb or keto diet.
There are at least 14 different flavors to choose from, and they are widely available in most grocery stores now. You can find out if your store carries it here.
For this berry bellini, we are going to use one of my personal favorites, ginger ale. In my opinion, it has the best champagne like flavor and has the sparkling touch that is perfect for this bellini. Making this couldn’t be easier.
Simply add your frozen berries and 1 can of ginger ale to a high speed blender and blend until smooth. Pour into your pretty glass and garnish! Enjoy right away.

Low Carb Berry Bellini
Ingredients
- 1 cup frozen strawberries (freeze from fresh for best results)
- 1/2 cup frozen blueberries (freeze from fresh for best results)
- 2 cans Zevia ginger ale
Instructions
- Combine all ingredients in a high speed blender and blend until smooth.
- Pour into glasses and enjoy!

The honey is optional, and not something initially used in Bellinis. Our collective taste buds have changed over the years and our ability to appreciate unsweetened beverages has certainly declined. That said, many people will find the peaches add enough sweetness. Others will want the honey.
