A brownie is something to behold. Rich, chocolatey, fudgy sweetness that melts in your mouth. That’s how a brownie should taste.
Almost the flavor of happiness, really.
The big issue with the conventional brownie is that they have loads of gluten and sugar. Two things that are not keto friendly. Sugar and gluten can cause inflammation in some people, and make it harder to lose weight. Taking those out on the keto diet is important.
Can I really have fudgy keto brownies?
Yes, yes you can! With gluten free flour like almond flour, and a keto friendly sweetener like erythritol, you can enjoy this keto brownie recipe as much as you’d like. As a matter of fact, they are rich and sweet enough that you won’t miss regular brownies at all!
Can I make them into mini brownies bites?
Some brownie recipes are made into “bites” by baking into a mini muffin pan. You CAN do that with this recipe, but know that they are not pretty when they come out. Since they are more dense, and gluten free brownies they don’t come out looking like traditional brownies.
For that reason, I chose to use the baking pan, and just cut them. If you aren’t concerned about their appearance as much, and want an easier way to control your macros, go with the mini muffin pan. Just spread 1 Tablespoon of the batter in each well of a 24 section mini muffin pan.

What sweeteners can I use in low carb brownies?
The only keto approved sweetener that doesn’t work in this recipe is stevia. That is simply because stevia doesn’t have the bulk that the brownies need. However, you can try these keto approved sweeteners:
- Erythritol (which is what I used)
- Lankato
- Swerve (a type of erythrtiol)
- Monkfruit
If you wanted to add a bit more chocolatey sweetness to your brownies, adding some Lilly’s chocolate chips would be nice. Just remember to always keep those macros in mind.
Ingredients:
- 1/4 cup cocoa powder
- 1 stick butter, melted
- 2 large eggs
- 1/3 cup almond flour
- 1 cup erithrytol
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
Instructions:
- Preheat oven to 350 degrees F.
- In a medium mixing bowl, combine cocoa powder and melted butter.
- Add in eggs and mix well to combine.
- Stir in almond flour, sweetener, salt and vanilla and mix well.
- Grease an 8×8 glass pan with butter or cooking spray.
- Bake in oven for 15-18 minutes, until toothpick comes out clean.
- Allow to cool completely and cut into 24 squares.
