Thick, creamy, buttery mashed potatoes are the ultimate comfort food, right? What could be better, except that they are loaded with sour cream? My entire family loves mashed potatoes!
The best variety for the greatest results is yukon gold potatoes. But, with 23 net carbs in a single serving, it’s not on the keto diet. In any way, shape or form. Besides, who can eat just one serving?
Most of us try and stay under 20 net carbs for the entire day, and potatoes are OUT on the keto diet. So, how do we get our mashed potato “fix”? That’s right, we find a keto friendly substitution! This is an easy recipe for low carb mashed potatoes.
And guess what? We AREN’T using cauliflower!
Most keto mashed potatoes call for cauliflower, that’s cooked in an instant pot, or on the stove top. Riced cauliflower is great, but it can get old after a while. Besides, when a head of cauliflower can cost up to $4.00, it’s not really a budget friendly side dish!
Other Ways To Try Radishes
We are going to make low carb mashed potatoes with a different vegetable.
Can you guess what it is? That’s right, our faithful friend, round radishes. While they have a sharp, peppery bite when eaten raw, radishes have a delicious sweetness to them when cooked.
Equal in carbs to cauliflower, radishes also make a beautiful dish when cooked. The light pink color that they still retain can dress up any meal and make it more special! No need to try and “fool” your family, they will love these from the start!
What’s so awesome about radishes, anyway?
They are not the most commonly loved veggie out there, and they definitely wouldn’t be considered “kid friendly” by many people. But, did you know that radishes boast a good amount of nutrients such as:
- riboflavin
- Vitamin B6
- Calcium
- Dietary Fiber
- Folate
All great things that your body needs! Plus, they are only 2 net carbs per cup! A truly versatile veggie, you can try them as a replacement for potatoes or carrots in recipes!
Besides the round radishes we are using here for low carb mashed potatoes, there are several different varieties that are easily found in grocery stores:
- French Breakfast-slightly longer versions of the common round radish-more mellow than round radishes, but still a bite when raw.
- Black Radishes-round radishes with a black exterior and white flesh. They are very sharp when raw, but deliciously mild when cooked.
- White Beauty -white inside and out, and has a very deep pungent flavor. Best when cooked, as they sweeten up a lot.
- Watermelon -so called for their watermelon like appearance when sliced, these are actually best served raw due to their beautiful color that is lost during cooking.

Ingredients:
- 12 ounces (2 packages) round radishes
- 3 cups water
- 1/2 cup heavy cream
- 4 Tablespoons butter
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- In a medium sized pot, heat the water on high.
- Slice the ends off the radishes and carefully place in the water.
- Boil for 10 minutes, or until they are very soft and fork tender. Drain the water.
- Add cream, butter, garlic, salt and pepper and mash together with a potato masher or mixer.
- Enjoy hot!
