A delightful sandwich, and a sister to the classic Reuben sandwich, this low carb version has all the flavor, but without the carbs!
What is a turkey Rachel? It is basically the same as the Reuben, but with a different meat. A Reuben will commonly have corned beef, whereas the Rachel is made with either pastrami or turkey.
Both sandwiches will have sauerkraut, Swiss cheese, and tangy Russian dressing.
Both can be found in nearly any deli across the world. Some areas will serve it with either French dressing, or with barbeque sauce. In Michigan, the turkey Rachel can be referred to as the “Georgia Reuben”.
The big problem? The rye bread it’s served on. The carbs in a slice of rye bread can be as much as 15 per slice! That’s enough to throw anyone off for the day!
In order to get our turkey Rachel sandwich fix, we are going to need to reduce those carbs.
Making this sandwich traditionally requires rye bread. It’s not good on the keto diet, so we are going to have to replace that. Low carb bread or lettuce wraps are good choices.
Having your turkey Rachel in a bowl will make it new and exciting, without needing to bake bread or wrap your sandwich!
What cheese is served with the turkey Rachel?
Traditionally, it is served with Swiss cheese. However, we are mixing things up with a different cheese. Gruyere cheese is a semi-soft cheese that is savory, but doesn’t overpower the rest of the ingredients.
Try this with a sugar free cranberry sauce for a new taste sensation!
Ingredients:
- 1 Tablespoon sesame oil
- ½ cup shredded cabbage
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 slices deli turkey
- 1/4 cup shredded Gruyere cheese
- 1 Tablespoon Russian dressing (optional)

Instructions:
- In a heavy bottomed skillet, heat sesame oil. Add shredded cabbage and garlic and season with salt and pepper.
- Sautee for 5-7 minutes, stirring often with a tongs to allow all the cabbage to cook down.
- Place sauteed cabbage in a bowl.
- Layer shredded cheese and turkey on top of sauteed cabbage.
- Drizzle Russian dressing over the top, if desired.
