I love trying new beverages. Adventuring in food at it’s finest. Drinks are easy because they usually take less time, and ingredients, and if you don’t like it, you haven’t wasted an entire meal.
When a friend of mine introduced me to the idea of a mojito, I was intrigued. I loved the light, sweet flavors she created with her take on this classic cocktail. I just knew I had to recreate one, without alcohol and low carb.
What is a mojito?
A mojito is traditionally made of five ingredients: mint sprigs, white rum, sugar, lime juice, and club soda. The combination of sweetness and refreshing citrus and spearmint flavors are intended to mask the potent kick of the rum. The mint leaves and sugar are muddled together in a tall glass. Then, add rum and ice to fill the glass.

This way, even the Boy can enjoy the drink. And, for some, even a little bit of alcohol can kick them out of ketosis. It’s easy to munch on carby foods after a drink or too, as well. Because I need to be careful, I simply stay away from alcohol.

No Alcohol Strawberry Mint Mojito
What do you use for the simple syrup?
Instead of the traditional sugar, we are going to use fresh strawberries and erythritol. Blended together, they will create a simple syrup that will go great in this strawberry mojito recipe. We will start by muddling the mint in a tall jar, add a squeeze of fresh lime juice, syrup and club soda, and we are good to go!
Do I need a cocktail shaker to make this mojito?
If you have a shaker, free free to mix it up that way! A mortar and pestle can be used to muddle the mint, if you are careful. Easy enough!
Ingredients:
- 1 cup water
- 3/4 cup erythritol
- 1 cup strawberries, divided
- 3 fresh mint sprigs
- juice of 1 lime (or 2 Tablespoons bottled)
- ice
- club soda to fill glass
Instructions:
- In a medium sized saucepan, add water, erythritol, and 1/4 cup of the strawberries.
- Bring to a boil, stirring constantly. Stir until sweetener is all dissolved. Allow to cool completely.
- In a tall glass, add 3-5 mint leaves, 1/4 cup simple syrup, 1-2 strawberries and 2 teaspoons fresh lime juice. Muddle with muddler or you can use a mortar and pestle top if you are careful.
- Add ice to 3/4 from the top of the glass, and fill with club soda. Stir quickly to combine, and enjoy!
