I have to admit that my favorite vegetable to eat is green beans. It’s probably because the first 2 years of our homestead garden, they were the only thing that produced at all. I also have to admit that green beans are the least favorite vegetable of everyone else in the house.
There in lies my problem. I can get away with making this low carb vegetable once in a while, so I have that going for me. The men of the house prefer more carby side dishes. But since I cook most of the food, and I am following a keto diet, they generally eat what I make.
What makes this low carb side dish so good is the addition of the bell peppers, and the Parmesan cheese. And the garlic, don’t forget the garlic. It’s one of my favorite low carb recipes.
Even they have to admit this green bean recipe is worth having more than once a week.
Are green beans keto friendly?
Absolutely they are! They contain only 2 net carbs in 1/2 cup. Green beans are also a good source of Vitamins A and C, Vitamin K, and folate. Naturally gluten free, and sugar free, they are the perfect low carb vegetable to round out your keto diet.

How do I make this keto side dish?
This recipe calls for fresh, not canned green beans. You will want to line the green beans up, and trim the ends. It’s best to precook the green beans a bit by themselves in the microwave. If you don’t use a microwave, you can simply steam them in the Instantpot, or cook 5-7 minutes on the stove top. You want them to be slightly tender.
Slice the peppers thinly, to help with even cooking. Add the oil to the pan, saute the garlic a bit, then add the green beans and the peppers.

I much prefer to use avocado oil myself, for sauteing and cooking. It’s a high heat stable oil that doesn’t break down. Olive oil can break down when heated, and even become racid. Actually, heating any oil beyond it’s smoke point can make it unsafe. To be on the safer side, I use avocado oil when cooking. read more here.

My favorite pans in the kitchen are my cast iron. They are solid workhorses, and provide great tasting food every single time. However, you can use any pan you would like or have on hand.

This easy Parmesan Green Beans recipe will be a hit on your holiday table!
Ingredients:
- 2 pounds fresh green beans, trimmed
- ¼ cup water
- 1/2 large red bell pepper, seeded and sliced
- 1/2 large orange or yellow bell pepper, seeded and sliced
- ½ onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons avocado oil
- 1 teaspoon salt
- Black pepper, to taste
- ⅓ cup freshly shredded Parmesan cheese
Instructions:
- Place green beans in a large, microwave-safe bowl. Pour water into bowl. Cover the green beans with a damp paper towel. Cook in the microwave on high for 5 to 8 minutes (depending on the wattage of your microwave) or until bright green and slightly tender. Drain the beans.
- Heat a large skillet over medium-high heat. Add avocado oil and heat until it shimmers. To the skillet, add sliced bell peppers, chopped onions, minced garlic, and green beans. Toss well and add salt and pepper as desired.
- Cover and cook, tossing occasionally to avoid burning, for 6 to 7 minutes or until the beans and peppers are tender. Toss with cheese.
- Serve topped with additional Parmesan cheese if desired.
