Ah, the wonderful cauliflower. It is a very versatile veggie in the keto/low carb world. It can become pizza, replace potatoes or rice and just about anything starchy. Cauliflower, you are the low carb dieter’s best friend, truly.
Now, when you need an exciting side dish that pairs great with meatloaf, roast chicken, or even with fried eggs, this roast cauliflower will do the job nicely. Roast cauliflower maintains it’s sweetness. Actually, it brings out the natural sweetness even more.
Cauliflower will also take on more of the flavors it is cooked with, essentially absorbing the oils and seasonings you put on it. A blank culinary canvas, cauliflower is on our menu nearly 3-4 times a week.
Are you ready to try roast cauliflower?
Quick and easy, this side dish is ready in less than 30 minutes. Cauliflower is done when it can be easily pierced with a fork. You want to be sure to NOT over roast it, because it will become mush. Not terrible if you are wanting roasted cauliflower mashed, though. Every thing can be used in the kitchen, right?
Ingredients:
- 1 head cauliflower, cut into florets
- 1 Tablespoon avocado or coconut oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 clove garlic, minced
Instructions:
- Cut cauliflower into florets, and place into a medium sized bowl.
- Cover with avocado or liquid coconut oil.
- Sprinkle seasonings and minced garlic over florets.
- Stir to coat.
- Place on a parchment paper lined baking sheet and roast in 400 degree oven for 20 minutes, until golden brown and easily pierced with a fork.
- Serve immediately.
