Salmon is a wonderful fish to have in your diet. It’s got healthy fats, is light in flavor and very easy to prepare. There are 2 main types of salmon, wild caught and farmed.
The majority of salmon consumed in the US is farmed from Canada, Chile, or Norway.
Wild Atlantic salmon fishing is currently prohibited, due to the low supply. Most “wild caught” salmon is Pacific salmon that is caught off the coast of Alaska. Salmon is a seasonal fish, being more in abundance in the Spring.
The seasons of different breeds of salmon vary a bit. Chinook, AKA “King Salmon” comes into season late May through early July. Sockeye salmon comes into season from June to late July. Silver salmon is in season from July through October.
Is farmed salmon healthy?
Farmed salmon often given antibiotics to prevent fish lice. They are also sometimes are given artificial coloring dye to give them that vibrant pink color most people recognize. Due to their inactivity, they are often fattier than wild salmon.
The good news is that all salmon, whether wild or farmed, tend to have lower levels of mercury than other large fish such as Tuna.
Care is being taken in Alaska to avoid over fishing. This will help keep salmon sustainable. Also, many farmers are working to eliminate antibiotics and artificial colors. (source)

Can I make salmon patties using canned salmon?
This recipe calls for canned salmon, as that is easy to get from the store. It’s also quite affordable, and you can store it on your pantry shelf, instead of taking up room in the fridge. Canned salmon also won’t spoil like fresh salmon.
Salmon patties can also be made using fresh salmon, if you wish. You will just grind up the salmon instead of opening the can.

Hi,
Just wanted to let you know that the “print” format recipe omits the heavy cream in the ingredients list, but the directions include it. I had printed my copy from that, and luckily I had heavy cream in the refrigerator, but I didn’t know how much to include (as I was too hungry to take the time to look it up! Yum, and thank you!
