Take back Taco Night in keto style with these taco stuffed tomatoes! All the flavors of your favorite tacos, in a low carb version!
When I was eating a full on carby diet, taco night happened at least once a week. You know, complete with flour or corn tortillas, beans, rice, and all the fixings. Loads of cheese, tomatoes and sour cream, stuffed into heavy, soft tortillas.
All that fat, PLUS all those carbs meant indigestion most of the time. Back then, we blamed it on all the garlic I used in cooking the taco meat. Or, the cheese. Now, I know that for us, it was all the carb laden foods we added.
White rice, which is what I used, can have up to 40 grams of carbohydrates per cup. Pinto beans can have up to 25 net carbs per cup. Flour tortillas can have 18 net carbohydrates per tortilla.
Are you adding that up with me? Two tacos, with a side of beans and rice is already over 100 grams of carbs! That’s more than enough carbs for 5 days on the ketogenic diet!
It’s no wonder I struggled with losing weight, feeling sad, and low energy. I would eat enough carbs at one meal that could have lasted me an entire week. (Yes, there was the overeating, too, but that’s beside the point here.)
I still want to have my tacos, and eat them too. So, I knew I had to low carb tacos that my entire family would eat.
Some will use cheese taco shells for their dinner. They are easy to make, simply take grated cheese, add in 1/4 cup circle, and bake at 300 degrees for 30 minutes. Cool laying over a bowl or wire rack to form the shell.
However, as much as we love our Mexican food, some of my family can’t handle that much dairy. These ground beef tacos stuffed tomatoes have some dairy on them, of course, but not to the point that it sits so heavy on their stomach.

What is the best taco seasoning to use?
You can buy the little packets at the store for seasoning your ground beef. However, you will want to be sure to check your ingredients. Many of them have fillers, including wheat. I find it best to make my own. You can use the recipe I use here.
What kind of meat should I use?
I prefer to use ground beef 80/20. I like a little bit of fat left on there, but not such much that the stuffed tomatoes get all greasy. You can use ground turkey, ground chicken, or a combination of any of them for a great flavor.
If you want to use the 73/27 ground beef, you certainly can. I would suggest that you drain some of the fat off before adding your seasoning. Save it like you would any other grease and use it to cook veggies in for later!

Bonus, they are gluten free. That’s a must on most keto diets, cutting out the gluten. Sure, you can use low carb tortillas, but for those who are following as strict keto diet, even those are out.
Ingredients
- 1 pound ground beef or turkey
- 1/4 cup homemade taco seasoning
- 1 cup shredded cheddar cheese
- 12 medium Roma tomatoes
- 1/2 cup sour cream
- cilantro, or green onions to garnish
- Avocado slices
Instructions:
- Brown the ground beef, and add the seasonings. Simmer according to package recipe. If using homemade, simmer with 1/4 cup of water for 10 minutes.
- Cut the Roma tomatoes in half lengthwise. Hollow out the seeds and inner parts carefully with a sharp knife.
- Add 3 Tablespoons of seasoned meat to each tomato half. Top with cheese.
- Place under broiler for 5 minutes, until cheese is all melted and bubbly golden brown.
- Top with sour cream, and cilantro as desired. Add avocado slices as desired.Serve immediately.
