Having a birthday cupcake is a family tradition. We love our birthday cupcakes! However, with 7 family members in our immediate family, that means a lot of birthdays each year. Having birthday cakes all the time can wreck havoc on the blood sugar.
That’s why these sugar free, keto cupcakes are the perfect substitute. They are made with blood sugar friendly erythritol, and gluten free almond flour. This cupcake recipe is a great way to celebrate the special moments without going away from your keto goals.
I think you will agree that these keto vanilla cupcakes with buttercream frosting are the best!
You can make these cupcakes in regular muffin pan, or a mini muffin pan. If you make this recipe with a mini muffin pan, you should yield 24 mini cupcakes.
How long will these keto vanilla cupcakes last?
If you are asking how quickly they will be eaten, the answer is they won’t last long. However, for storage, they will store in the fridge in an airtight container for up to 5 days. You may be able to keep them for 7 days. To be honest, they never last long enough around here for me to prove that.

- 1 1/2 cups blanched almond flour
- 1/2 cup powdered erythritol
- 2 teaspoons baking powder
- 4 Tablespoons melted butter
- 6 eggs
- 2 teaspoons vanilla extract
- 4 ounces cream cheese, softened
- 3 Tablespoons butter, softened
- 1/2 cup powdered erythritol
- 1/2 teaspoon vanilla extract
Instructions:
- In a medium sized bowl, combine almond flour, erythritol, and baking powder.
- Using a separate bowl , beat together melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir well.
- Line a 12 piece muffin pan with cupcake liners.
- Scoop 1/4 cup mixture into lined cupcake pan.
- Bake at 350 for 18-20 minutes, until toothpick inserted comes out clean.
- Allow to cool completely before frosting.
- Combine cream cheese,vanilla butter and sugar (powdered erythritol) in a medium sized bowl.
- Whip with hand blender until light fluffy. Frost cupcakes as desired.

yes that is what I did.
Can I subsutite coconut flour instead of almond flour
Coconut flour is far more dense than almond flour and is not a good 1:1 replacement. You can try adding some coconut flour to the recipe if you’d like, but the rest of the ingredients would need to be changed if you sub coconut flour completely.
