Your body needs fats and protein. Fat keeps you full, and protein is the building block of all your cells, including hair, nails, and muscles. When you are on a ketogenic, or low carb diet, most of your protein will come from low carb sources. Meat.
Adding in high quality meats like chicken, red meat, and fish is a great way to get that protein. However, that’s not to say we can’t enjoy it with flavor! If we can’t enjoy our food, what’s the point, right? That’s where this spicy chimichurri comes in.
There’s nothing quite like a flank steak with keto chimichurri sauce.
What is chimichurri?
It’s an uncooked sauce, made with olive oil and fresh herbs, that is used for grilled meat. Although it comes in both green and red versions, it’s more common to see the green sauce. The flavors may vary a bit, but are most often parsley and garlic dominant. It has a bright flavor profile and accentuates the food it is served with.
Chimichurri originated in Argentina, and is very popular throughout South America. Most often used on steak, it can also flavor chicken and fish.
Essentially, it’s the South American version of Italian pesto. With a kick.
What I love about chimichurri is how quickly it is put together. Just a couple minutes and some fresh ingredients and you have sauce. Bright, lovely green sauce. I like to add fresh jalapenos to mine to take the flavor profile up a notch as well.

Is chimichurri sauce spicy?
It doesn’t have to be. You can add crushed red pepper, more jalapeno, or even some cayenne to your chimichurri sauce, depending on how hot you like it. Or you can leave that all out, and just have the garlic and fresh herbs. Totally up to you. This recipe has a bit of a mild kick, but can be scaled back.
Jalapenos contain capsicum, which is thought to help increase metabolism and burn fat. You can leave it out, or add less if you would like. Or, you can add more jalapenos. I certainly wouldn’t complain about that!
How long will chimichurri last?
This recipe is more than enough to cover 3 pounds of skirt steak, and salad on the side for 6. It will store nicely in the fridge for 7-10 days in a tightly covered container, so you can enjoy it whenever you would like. It will also freeze for up to 3 months.
Ingredients:
- 1 cup olive oil
- 4 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup fresh chopped parsley ( a large bunch)
- 1 cup fresh chopped cilantro
- 1 small jalapeno, seeded
- juice of 1/2 lemon, or 1 Tablespoon bottled lemon juice
Instructions:
- Add all ingredients to blender or food processor.
- Blend until smooth.
- Drizzle over steak and/or salad.
- Store leftovers in the fridge for up to a week.
